Flowers are almost always an essential part of any special occasion. Just like food, flowers too, are perishable in nature. Plant-based resin is growing in popularity as a medium to create transparent, functional pieces of art; created by setting dehydrated flowers in the mixture. The popularity of edible flowers has skyrocketed in the race to create photogenic food in the age of social media. However, we know and understand little about edible flowers, their flavours and which ones can be consumed. Freeze The Flavour – Nectar Edition dives deep into the intricate ecosystem

Nectar

Nectar brings to peoples’ attention the current issue of the dwindling bee population; adulteration in honey supply and the importance of bees in pollination. Guests are served signature ‘Nectar Shots’ – diluted multiflora honey in tiny bottles, served with long paper straws (we can spike these with any alcohol you choose on the day). This disproportionate straw-bottle ratio represents the tongue of the bees which are 3x longer than their bodies as they suck nectar out of the flowers during pollination.

We plate the dessert live in front of the guests as they see the edible artwork come to life. Our signature dessert includes floral and honey-based flavours, is a carefully curated combination of sweet, bitter, savoury and sour flavours. Once we create the edible artwork, guests take on the role of bees, as they ‘pollinate’ across all the different elements; creating customised eating experiences and building their own mouthfuls. The dessert is paired with honey-based fermented meads.
